Pizza or Tarte?

Why stop at pizza, when you can extend your exceptional skills to serving up Tarte Flambée? From the Alsace region of France, the world was blessed with these thin crust delights. The dough is different from a pizza dough (find recipes online), and there is no tomato base like pizza. Instead, use oils, cheeses, crème fraîche and other spreadable layers to build up from. Keep layering to a minimum as the height should be fairly low and just 3-4 toppings should be used.  For additional layers, mushroom or onion/shallots (very thinly sliced ), different cheeses, bacon, cooked duck meat, or other similar ingredients can be used. Finish off with a sprinkle of your best oil, herbs or garnishes. While the tradition is a small rounded rectangle, keep in mind the maximum cooking surface is 31cm diameter.
